Filet
8 oz. portions of the beef tenderloin. Prime, buttery cut.
STEAKS
Ribeye
Prime cut from the rib section. Known for it’s fat marbling and rich flavor. 1.25” thick.
Tomahawk Ribeye
Bone-in ribeye. A fun cut for all grill lovers!
New York Strip
A very tender, yet lean cut with a fat strip along the side.
Sirloin
Sirloin comes from the upper portion of the back-end and is the most tender and lean cut from that area.
Flank
Cut from the abdominal region, the flank is a thin, lean cut great for a quick grill or sear.
Flat Iron
Comes from the shoulder blade. Flat iron is tender and flavorful.
Skirt
A thin cut of beef from the chest and abdominal area. Great for a quick sear.
Tenderized Round
Comes from the rear end and is a thin, lean cut. It makes the perfect chicken fried steak or stir-fry!
Ranch Steak
Also known as the chuck roast center-cut steak. A very lean cut.
Bavette
Similar to a flank steak or skirt. Bavette has layered marbling, tenderness, and full flavor.

Picanha
The top cap of the sirloin.
Brisket
Trimmed brisket. Average 4.5 lbs.
*We can do a whole, untrimmed brisket on request.
Tri Tip
Tri tip is a roast cut found on the bottom sirloin. Cook it in the oven or smoke it to lock in the juices.
Short Ribs
Large beef ribs.
Flanken Ribs
Beef Short Ribs that are cut thinly across the bone. Full of flavor and perfect for braising or throwing on the grill!
Osso Bucco
Full flavor beef with the marrow bone in the center. Perfect slow-cooked cut or a great addition to bone broth
Stew Meat
Dry aged and cubed beef roast.
ROAST CUTS
Chuck Roast
Fatty and flavorful roast cut from the shoulder.
Seven Roast
Seven roast comes from the same area as the chuck roast and has comparable marbling and structure.
Rump Roast
Great versatile cut of lean beef. Slow roast it in the oven or turn it into beef jerky!
Marrow Bones
Canoe cut marrow bones are a great source of nutrients. Use it in a broth or spread it on toast!

Knuckle Collagen Bones
These beef bones are full of collagen and nutrients that are perfect for bone broth!

Oxtail
The perfect mixture of beef and collagen. Great slow-cooked or in a stew.
Cheek Meat
Braise the cheek meat low and slow for a really tender and flavorful cut of beef.
Heart
A very nutrient dense cut of beef, packed with iron and protein! Pan-fry or grill and slice it up! Or try it in the slow-cooker to add to a stew.
Tongue
A beef delicacy! Slow-cooked beef tongue can make juicy and tender tacos or served sliced as-is.
Ground Beef - 90/10 Blend
90% lean, 10% fat. Cleaner, richer, more nutrient dense than your usual ground beef. Dry aged, so it's always soft and tender.
We process one steer at a time, so the ground beef is never a mixture of multiple animals.

80% lean, 20% fat.
