NATURAL MARBLING AND TENDERNESS

A steer’s body fat, marbling, increases with age. Flesh tenderness also increases with age.

We have found that at full maturity a range fed steer is at its most marbled and most tender!

Before we get too cocky, full maturity in a range fed steer takes 4-5 years.

100 years ago all ranchers knew this.

Today we have relearned this. We raise our steers ~3 to 5 years before they reach you.

RAISED WILD BEEF

Texas. 1880.

Ranchers raised their cattle wild.

Cattle free grazed through the open wilderness of the Hill Country…

…the Backland Prairie.

…the Western Plateau.

NATIVE TEXAS FORAGE

They grew strong grazing on hundreds of different types of native forage.

And they grew gradually, following all of the natural cycles of the seasons.

Ranchers waited years for their steers to reach full weight and maturity.

TEXAS TRAIL HERD

Ranchers then pushed these big ‘ole steers 500 miles through Texas, Oklahoma and Kansas to the railhead in Abeline. Along the Goodnight-Loving, Chisum and Shawnee cattle trails.

These range fed steers often arrived in the same weight and condition as when they left Texas. Cattle drives actually mimicked the natural mob grazing instincts of bovines.

WILD BEEF IS WORTH THE WAIT

Today our ranch honors the open range free grazing traditions of 100 years ago. We have the same patience for nature. The same passion for quality beef.

We raise our cattle wild.We have a ratio of 1 cow per 8 wild acres.

TEXAS IN ONE PLACE

The ranch is fortunate to have all the environments of Texas in one place. Flat blackland pastures with lakes and streams. High sandy plateaus and limestone hills filled with over 200 types of native grasses and forage.(Big bluestem, little bluestem, sideoats gramma, vetch, fescue, ryegrass, bermudagrass, Johnsongrass, indiangrass…)

We allow our cattle the time to graze freely and consume exactly what nature designed them to consume. Forage and water.

TRAIL HERD

Like the days of the Texas cattle trails, we run a completely separate steer “cattle drive” herd. Just steers to grow for beef. We don’t push them to the railhead, just around the ranch.

(Actually Chambers Creek Ranch is on the old Shawnee trail. So they make a continuous loop around the old Texas Trail!)

RAISED SLOW

This allows us to grow steers gradually for years before they’re ready for your plate.

We are patient so that you can be sure that your steer, your beef, is tender, healthy, raised wild.
